Newton News: Neighborhood Cooking with Candy Gold: Zack Decter

Candy Gold invites Zack Decter to share his recipes for cooking over April vacation.

Cool Crepes (adapted from Jacques Pepin)

2 eggs

3/4 cup ap flour

1/2 cup milk

1/2 tsp sugar

1/3 cup water

1 tbs canola/vegetable oil

1 tbs melted butter

Hand mix all ingredients in bowl with a whisk. Cook on medium high heat with 1 tsp of melted butter in the pan. Spread crepe batter evenly covering bottom of medium size pan. Flip crepe when brown around edges and easy to lift. Fill and fold on a plate, best while still hot.

Zack’s tip: For savory crepes try adding your favorite herb (chives or rosemary) to the batter and filling with caramelized onions (sautee white onions with brown sugar), sautéed mushrooms, chicken, and/or grated cheese (try gruyere).  For sweet crepes, try adding 1tsp of vanilla to batter and fill with Nutella spread, chopped fruit or toasted coconut.

Classic Cupcakes (Food Network)

1 1/2 cups ap flour

1 1/2 tsp baking powder

2 eggs

2/3 cups sugar

1 1/2 sticks melted butter

2 tsp vanilla

Beat wet ingredients with sugar and then mix with dry. Bake 350 for 18-20 minutes. Makes 12 regular or 24 mini cupcakes. Top with your favorite frosting and optional decorative sprinkles.

Zack’s tip: Try adding a few drops of mint extract into the cupcake batter and frosting and top with crushed peppermint. Treat the grown-ups by mixing in espresso coffee in the batter and frosting, and top with a chocolate coated espresso bean.

Zack’s Popcorn Chicken

4 boneless chicken breasts

1 tbs cracked black pepper

1 cup ap flour

2 eggs and 2 egg whites

1 large bottle of canola oil

Mix flour with cracked black pepper keep on one plate. Crack eggs and egg whites beat up and put in large bowl. Cube 4 chicken breasts, about a square inch. Roll chicken in flour until fully coated, dip in egg mixture until fully coated and then back in the flour. Fill half a pot with canola/vegetable oil and heat to 365 degrees, put chicken in for approximately three minutes. Pat excess oil with paper towel.  Feeds approximately 4 people.

Zack’s tip: For a special dipping sauce, try mixing ½ cup maple syrup, 1 tbsp BBQ sauce, 2 tbsp white vinegar and 1/2tbsp red chili flakes for a kick.
